Ingredients
12 oz fettuccine or pasta of choice
2 tbsp olive oil
2 boneless, skinless chicken breasts
1 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp cumin
Salt and pepper to taste
3 tbsp butter
4 cloves garlic, minced
2 cups heavy cream
1 cup freshly grated Parmesan cheese
1/2 cup shredded pepper jack cheese
1 cup corn kernels (fresh, frozen, or canned)
1 cup black beans, rinsed and drained
1/4 cup diced green chilies
Juice of 1 lime
Fresh cilantro, chopped, for garnish
Instructions
- Cook the Pasta – Cook the pasta according to package instructions. Reserve 1/2 cup of pasta water before draining. Set pasta aside.
- Season and Cook the Chicken – Season the chicken with chili powder, smoked paprika, cumin, salt, and pepper.
- Sear the Chicken – Heat olive oil in a large skillet over medium heat. Cook chicken for 6-7 minutes per side until golden brown and fully cooked. Remove, let it rest for 5 minutes, then slice.
- Prepare the Sauce – In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Simmer the Sauce – Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan and pepper jack cheese until smooth.
- Add Southwest Ingredients – Mix in corn, black beans, green chilies, lime juice, and reserved pasta water. Simmer for 2-3 minutes.
- Combine & Serve – Toss the cooked pasta into the sauce, then fold in the sliced chicken. Garnish with fresh cilantro and serve warm.
