Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
24 oz cream cheese, softened
1 cup granulated sugar
1 tablespoon vanilla extract
4 large eggs
1/4 cup sour cream
1/4 cup heavy cream
1/4 cup all-purpose flour
1/4 cup packed brown sugar
Fresh berries, for garnish (optional)
Instructions
- Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a medium bowl, mix graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Press into the bottom of the pan.
- Beat cream cheese, 1 cup granulated sugar, and vanilla extract until smooth. Add eggs one at a time, beating after each addition.
- Mix in sour cream, heavy cream, and flour until combined. Pour over the crust.
- Place the springform pan in a large roasting pan. Fill the roasting pan with hot water halfway up the sides of the springform pan.
- Bake for 60-70 minutes until edges are set and center is slightly jiggly. Cool in the water bath for 30 minutes, then on a wire rack.
- Refrigerate for at least 4 hours or overnight. Before serving, sprinkle brown sugar over the top and caramelize with a kitchen torch.
- Garnish with fresh berries if desired. Slice and serve chilled.
