Ingredients
1 lb (450g) chicken tenders or chicken breast, cut into strips
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
1/2 cup all-purpose flour
2 large eggs, beaten
Olive oil spray
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly spray parchment with olive oil.
- Set up a breading station: flour in one dish, beaten eggs in another, and a mixture of panko breadcrumbs, Parmesan, paprika, garlic powder, onion powder, salt, and pepper in a third.
- Pat chicken strips dry with paper towels. Coat each piece in flour, dip in eggs, and press into the breadcrumb mixture.
- Arrange breaded chicken on the prepared baking sheet. Spray lightly with olive oil.
- Bake for 18-20 minutes, flipping halfway, until golden and cooked through (internal temperature: 165°F or 74°C).
- Serve immediately with dipping sauces like honey mustard, ranch, or BBQ sauce.
Notes
For a spicy version, add cayenne pepper to the breadcrumb mix.
To make gluten-free, use gluten-free flour and breadcrumbs.
Reheat leftovers in a 375°F (190°C) oven for 8-10 minutes for best results.
