Ingredients

1/2 head green cabbage, shredded
2 carrots, sliced
2 celery stalks, chopped

1 can (14.5 oz) diced tomatoes
4 cups vegetable broth
1 teaspoon apple cider vinegar
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1/4 cup fresh parsley, chopped
Juice of 1/2 lemon
Instructions
- Sauté the Aromatics – Heat olive oil in a large pot over medium heat. Add onion and cook for 2-3 minutes until softened.
- Toast the Spices – Stir in garlic, ginger, turmeric, cumin, and paprika. Cook for 1-2 minutes until fragrant.
