Description

This Easy Asian Cucumber Salad is a refreshing and tangy side dish that’s perfect for summer gatherings and healthy snacking. With crisp cucumber slices dressed in a savory, slightly sweet rice vinegar and soy sauce dressing, this salad is light, flavorful, and comes together in just minutes. Ideal for complementing grilled meats or as a stand-alone snack, it’s a versatile addition to any meal.

Ingredients

2 large cucumbers, thinly sliced

1/4 cup rice vinegar

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon sugar

1 clove garlic, minced

1/2 teaspoon red pepper flakes (optional)

1 tablespoon sesame seeds

2 tablespoons green onions, thinly sliced

Instructions

  1. In a large bowl, combine the thinly sliced cucumbers with rice vinegar, soy sauce, sesame oil, sugar, minced garlic, and red pepper flakes (if using).
  2. Toss the cucumbers until they are evenly coated with the dressing.
  3. Let the salad sit for 10-15 minutes to allow the flavors to meld.
  4. Sprinkle with sesame seeds and sliced green onions just before serving.
  5. Serve chilled or at room temperature.

Notes

For extra crunch, add sliced radishes or julienned carrots.

To make the salad spicier, increase the amount of red pepper flakes or add a dash of sriracha.

If preparing ahead, keep the dressing separate until ready to serve to maintain cucumber crispness.
