Ingredients

2 lbs russet potatoes, peeled and diced

1 small onion, finely chopped

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon onion powder

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley, chopped (for garnish)


Instructions

  1. Prep the Potatoes: Peel and dice the potatoes into small, evenly sized cubes. Finely chop the onion.
  2. Season the Potatoes: In a large bowl, toss the diced potatoes with olive oil, garlic powder, paprika, onion powder, dried oregano, salt, and black pepper until the potatoes are evenly coated.
  3. Cook the Potatoes: Heat a large skillet over medium heat. Add the seasoned potatoes and chopped onion to the skillet. Cook, stirring occasionally, for about 20-25 minutes, or until the potatoes are golden brown and crispy on the outside and tender on the inside.
  4. Serve: Remove the potatoes from the skillet and transfer them to a serving dish. Garnish with chopped fresh parsley and serve hot.

Notes

Potato Variety: While russet potatoes are preferred for their crispiness, Yukon Gold or red potatoes can be used as well.

Storage: Store leftovers in an airtight container in the refrigerator for up to 3-4 days. For best results, reheat in the oven or a skillet to maintain crispiness.
