Description

Ingredients

2 ripe bananas, mashed

1 cup fresh or dried cranberries

1/2 cup chopped walnuts (or pecans)

2 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/3 cup vegetable oil (or melted butter)

2 large eggs

1 tsp vanilla extract

1/2 tsp ground cinnamon

Optional: 1/4 tsp nutmeg


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg (if using).
  3. In a separate bowl, mix mashed bananas, granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
  4. Fold the wet ingredients into the dry ingredients gently until just combined. Do not overmix.
  5. Stir in cranberries and chopped nuts.
  6. Pour batter into the prepared loaf pan, smoothing the top.
  7. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and serve.

Notes

For a nut-free version, omit nuts or replace with chocolate chips.

To make it vegan, substitute eggs with flax eggs and use plant-based oil.
