Ingredients
2 ripe bananas, mashed
1 cup fresh or dried cranberries
1/2 cup chopped walnuts (or pecans)
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup granulated sugar
1/4 cup brown sugar, packed
1/3 cup vegetable oil (or melted butter)
2 large eggs
1 tsp vanilla extract
1/2 tsp ground cinnamon
Optional: 1/4 tsp nutmeg
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
- In a large bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg (if using).
- In a separate bowl, mix mashed bananas, granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
- Fold the wet ingredients into the dry ingredients gently until just combined. Do not overmix.
- Stir in cranberries and chopped nuts.
- Pour batter into the prepared loaf pan, smoothing the top.
- Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and serve.
Notes
For a nut-free version, omit nuts or replace with chocolate chips.
To make it vegan, substitute eggs with flax eggs and use plant-based oil.
