Ingredients

1 lb ground beef

1 small onion, diced

3 cloves garlic, minced

4 large russet potatoes, thinly sliced

2 cups shredded cheddar cheese

1 can (10.5 oz) cream of mushroom soup

1/2 cup milk

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/2 teaspoon dried thyme

2 tablespoons unsalted butter

Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook the ground beef in a large skillet over medium heat until browned, breaking it up as it cooks. Drain excess fat.
  3. Add the diced onion and minced garlic to the beef and cook until the onion is soft, about 5 minutes. Season with salt, pepper, and paprika.
  4. In a separate bowl, mix the cream of mushroom soup and milk until smooth.
  5. Layer half of the sliced potatoes in the baking dish. Top with half of the beef mixture and 1 cup of shredded cheddar cheese. Repeat layers with remaining potatoes, beef, and cheese.
  6. Pour the soup mixture evenly over the layers. Dot with small pieces of butter.
  7. Cover with foil and bake for 60-70 minutes, until potatoes are tender. Remove foil and bake an additional 10 minutes until the top is golden.
  8. Garnish with chopped parsley before serving.

Notes

For a variation, try adding vegetables like bell peppers or mushrooms to the beef mixture.

You can make this casserole ahead of time and refrigerate it until ready to bake.
