Ingredients

1 lb ground beef or Italian sausage

1 onion, chopped

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups beef broth

2 cups uncooked pasta (e.g., lasagna noodles, broken)

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

1 cup ricotta cheese

1 cup shredded mozzarella cheese

Fresh basil for garnish


Instructions

  1. In a large pot, brown the ground beef or Italian sausage over medium heat. Drain excess fat.
  2. Add chopped onion and minced garlic; cook until the onion is soft and translucent, about 3-5 minutes.
  3. Stir in the crushed tomatoes, beef broth, oregano, basil, red pepper flakes (if using), and salt and pepper. Bring the mixture to a simmer.
  4. Add the uncooked pasta and cook for 8-10 minutes until the pasta is al dente.
  5. Stir in the ricotta cheese until well combined.
  6. Serve hot, topped with shredded mozzarella cheese and fresh basil.

Notes

For extra flavor, you can add a splash of heavy cream to make the soup creamier.

If storing leftovers, cook the pasta separately to avoid it becoming mushy during reheating.

Ground turkey or plant-based meat can be substituted for a lighter or vegetarian version.
