1 tablespoon lemon zest
1/2 teaspoon vanilla extract
Instructions
- In a large mixing bowl, whip the chilled heavy cream with an electric mixer on medium speed until soft peaks form.
- Gradually add the granulated sugar while continuing to whip until stiff peaks form. Be careful not to overwhip.
- In a separate bowl, combine the fresh lemon juice, lemon zest, and vanilla extract.
- Gently fold the lemon mixture into the whipped cream using a spatula until fully incorporated.
- Spoon the lemon mousse into serving glasses or bowls and smooth the tops.
- Chill the mousse in the refrigerator for at least 2 hours to set.
- Before serving, garnish with lemon zest, a sprig of mint, or a thin lemon slice.
Notes
Avoid overwhipping the cream to prevent a grainy texture.
Fresh lemon juice yields the best flavor, but bottled juice can be used in a pinch.
