5–6 ripe pears, peeled, cored, and sliced
1/4 cup granulated sugar

1 teaspoon vanilla extract
1 tablespoon cornstarch (optional, for a thicker filling)
For the Oat Crumble Topping:
1 cup old-fashioned rolled oats
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger (optional)
1/4 teaspoon salt
1/2 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8-inch or 9×9-inch baking dish.
- In a large bowl, combine sliced pears, granulated sugar, lemon juice, ground cinnamon, ground nutmeg, and vanilla extract. Optionally, add cornstarch if you prefer a thicker filling. Toss to coat the pears evenly.
- Pour the pear mixture into the prepared baking dish, spreading it out evenly.
- In a separate bowl, mix old-fashioned rolled oats, all-purpose flour, brown sugar, ground cinnamon, ground ginger (if using), and salt. Pour melted butter over the mixture and stir until clumps form.
