4 cups pumpkin puree (canned or fresh)
4 cups vegetable broth
1/2 cup heavy cream or coconut milk

Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
