Ingredients
1 cup granulated sugar
1/2 cup light corn syrup
1/2 cup unsalted butter, cut into pieces
1 cup heavy cream
1 teaspoon pure vanilla extract
1 teaspoon flaky sea salt (for topping)
Instructions
- Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a heavy-bottomed saucepan, combine sugar, corn syrup, butter, and cream over medium heat. Stir until butter melts and sugar dissolves.
- Bring the mixture to a gentle boil. Attach a candy thermometer and cook, stirring occasionally, until it reaches 245°F (firm ball stage).
- Remove from heat and stir in vanilla extract.
- Pour the caramel into the prepared pan, smooth the surface, and let it cool at room temperature for about 2 hours.
- Sprinkle with flaky sea salt and cut into squares or rectangles. Wrap each in parchment or wax paper.
Notes
To prevent crystallization, avoid stirring once the sugar dissolves.
Use a candy thermometer for precise results.
