Ingredients

1 cup granulated sugar

1/2 cup light corn syrup

1/2 cup unsalted butter, cut into pieces

1 cup heavy cream

1 teaspoon pure vanilla extract

1 teaspoon flaky sea salt (for topping)


Instructions

  1. Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a heavy-bottomed saucepan, combine sugar, corn syrup, butter, and cream over medium heat. Stir until butter melts and sugar dissolves.
  3. Bring the mixture to a gentle boil. Attach a candy thermometer and cook, stirring occasionally, until it reaches 245°F (firm ball stage).
  4. Remove from heat and stir in vanilla extract.
  5. Pour the caramel into the prepared pan, smooth the surface, and let it cool at room temperature for about 2 hours.
  6. Sprinkle with flaky sea salt and cut into squares or rectangles. Wrap each in parchment or wax paper.

Notes

To prevent crystallization, avoid stirring once the sugar dissolves.
