2 packs instant ramen noodles (discard seasoning packets)
1 tablespoon vegetable oil
3 cloves garlic, minced
1 tablespoon soy sauce
1 tablespoon hoisin sauce
1 tablespoon sriracha or chili sauce (optional for heat)
1 teaspoon sugar or maple syrup
1/2 cup vegetable broth or water
1/2 teaspoon sesame oil
1 cup mixed vegetables (such as bell peppers, carrots, or bok choy)
1/4 cup green onions, chopped (for garnish)
Sesame seeds (for garnish)
Instructions
- Cook the Noodles: Prepare the ramen noodles according to package instructions. Drain and set aside.
- Prepare the Sauce: In a small bowl, mix together soy sauce, hoisin sauce, sriracha (if using), sugar, and vegetable broth or water. Set aside.
- Stir-Fry the Vegetables: Heat vegetable oil in a large pan or wok over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add mixed vegetables and stir-fry for 3-4 minutes, until tender but still crisp.
- Combine Noodles and Sauce: Add the cooked noodles to the pan with vegetables. Pour the sauce over the noodles and toss to coat evenly. Drizzle with sesame oil and cook for another 1-2 minutes until heated through.
