2 tbsp olive oil

1 small onion, diced

2 garlic cloves, minced

2 celery stalks, sliced

6 cups chicken broth

1 (14.5 oz) can diced tomatoes, undrained

1 tsp dried Italian seasoning

Salt and black pepper, to taste

9 oz cheese tortellini (fresh or frozen)

2 cups fresh spinach or kale, chopped

1/4 cup fresh parsley, chopped (optional)

Grated Parmesan cheese, for serving


Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery for 5-7 minutes until softened.
  2. Add chicken broth, diced tomatoes (with juice), Italian seasoning, salt, and pepper. Bring to a boil.
  3. Reduce heat and simmer for 10-15 minutes to blend the flavors.
  4. Add tortellini to the pot and cook according to package instructions (about 5-7 minutes).
