Ingredients

4 boneless, skinless chicken breasts

1 cup long-grain white rice, uncooked

1 can (10.5 oz) cream of chicken soup

1 can (10.5 oz) cream of mushroom soup

1 1/2 cups chicken broth

1 packet onion soup mix

Salt and pepper, to taste

Fresh parsley, chopped (optional, for garnish)


Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Spread the uncooked rice evenly across the bottom of the baking dish.
  3. In a mixing bowl, whisk together the cream of chicken soup, cream of mushroom soup, and chicken broth until smooth.
  4. Pour half of the soup mixture over the rice, spreading evenly.
  5. Place the chicken breasts over the rice, then season with salt and pepper.
  6. Pour the remaining soup mixture over the chicken, ensuring it is fully covered. Sprinkle the onion soup mix over the top.
  7. Cover the dish tightly with foil and bake for 1 hour and 30 minutes, or until the chicken is cooked through and rice is tender.
  8. Remove foil in the last 15 minutes of baking if you want the top to brown slightly.
  9. Garnish with fresh parsley before serving.
