Ingredients

1 pound potato gnocchi

2 tablespoons olive oil

2 boneless, skinless chicken breasts, cut into bite-sized pieces

1 teaspoon salt

1 teaspoon Italian seasoning

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 1/2 cups baby spinach

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1 tablespoon butter

1/2 teaspoon red pepper flakes (optional)


Instructions

  1. Bring a pot of salted water to a boil and cook the gnocchi according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add the diced chicken, season with salt, pepper, and Italian seasoning, and cook for 5-7 minutes until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add butter and garlic. Sauté for 30 seconds until fragrant.
  4. Add cherry tomatoes and cook for 2 minutes until slightly softened.
  5. Stir in spinach and cook until wilted.
  6. Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
  7. Add the cooked gnocchi and chicken back to the skillet, stirring to coat everything in the creamy sauce.
  8. Sprinkle in Parmesan cheese and red pepper flakes (if using), then stir until the sauce thickens slightly.
  9. Serve hot, garnished with extra Parmesan if desired.
