Instructions

  1. Prepare the dough:
    • Combine flour and salt in a bowl. Add water, oil, and vinegar, mixing until a dough forms.
    • Knead for 8-10 minutes until smooth and elastic. Cover and rest for 1 hour at room temperature.
  2. Make the filling:
    • In a large bowl, toss apples with sugars, raisins (if using), cinnamon, nutmeg, lemon zest, and juice. Set aside.
  3. Prepare the dough sheet:
    • Preheat oven to 375°F (190°C). Place a floured kitchen towel on a large surface. Roll dough into a thin rectangle, stretching gently until nearly transparent.
  4. Assemble the strudel:
    • Brush dough with melted butter. Sprinkle toasted breadcrumbs evenly. Spread apple mixture along one short edge, leaving a 2-inch border.
    • Use the towel to roll dough into a log, sealing the edges.
  5. Bake the strudel:
    • Place seam-side down on a parchment-lined baking sheet. Brush with melted butter. Bake for 35-40 minutes until golden brown.
  6. Serve:
    • Cool slightly, dust with powdered sugar, and serve warm with vanilla ice cream or whipped cream.
