Ingredients

4 oz cream cheese, softened
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Set aside.
- In a large mixing bowl, cream the butter and brown sugar together until light and fluffy. Add the molasses, egg, and vanilla extract, mixing until smooth.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Chill the dough in the refrigerator for 30 minutes.
- In a separate bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
- Scoop 1 1/2 tablespoons of dough, flatten slightly, and place 1/2 teaspoon of cheesecake filling in the center. Fold dough around the filling and roll into a ball.
- Place the dough balls 2 inches apart on the prepared baking sheet and bake for 10-12 minutes, or until the edges are set and tops are slightly cracked.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Chill the dough for easier handling and better texture.
You can freeze the cookie dough (either before or after baking) for up to 3 months. Just thaw and bake as directed when ready to use.
