Ingredients
8 slices of thick bread (sourdough or brioche work great)
2 cups shredded cheddar cheese (or cheese of choice)
2 tablespoons butter, softened
Optional: cooked bacon bits, sliced jalapeños, chopped tomatoes, or pesto

Instructions

Lay out 4 slices of bread and top each evenly with shredded cheese. Add optional fillings like bacon, jalapeños, tomatoes, or pesto if desired.

Place the remaining slices of bread on top to form sandwiches.

Grill the sandwiches on a skillet or panini press over medium heat until golden and crispy on both sides, and the cheese is melted—about 3–4 minutes per side.
