Ingredients

4 slices of bread (sourdough or your favorite)

4 ounces fresh mozzarella, sliced

2 tablespoons butter, softened

Salt and pepper to taste

Optional: fresh basil leaves, tomato slices, or a drizzle of balsamic glaze


Instructions

  1. Spread the softened butter on one side of each slice of bread.
  2. Place 2 slices of bread, butter side down, in a preheated skillet over medium heat.
  3. Layer the fresh mozzarella slices evenly over the bread. Add a pinch of salt and pepper, and if desired, layer on fresh basil leaves or tomato slices.
  4. Top with the remaining slices of bread, butter side up.
  5. Cook for 3-4 minutes on each side, pressing down gently with a spatula, until the bread is golden brown and the mozzarella is melted and gooey.
  6. Remove from the skillet, slice, and serve hot. Add a drizzle of balsamic glaze if you like!

Notes

For extra flavor, mix garlic into the butter before spreading.
