Ingredients
1 lb shrimp, peeled and deveined
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon ground cumin
Salt and pepper, to taste
1 avocado, diced
1 cup corn kernels (fresh or frozen)
1/2 red onion, finely chopped
1/2 cup cilantro, chopped
Juice of 1 lime
1/4 cup sour cream
2 tablespoons mayonnaise
1 tablespoon lime juice
1 tablespoon olive oil
1 teaspoon honey
1/2 teaspoon chili powder
Salt, to taste
Instructions

Preheat the grill to medium-high heat.

In a bowl, toss the shrimp with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper.

Grill the shrimp for 2-3 minutes per side, or until pink and fully cooked. Remove from the grill and set aside.

In a medium bowl, combine the avocado, corn, red onion, cilantro, and lime juice. Mix gently.

Notes

Fresh corn is preferred, but frozen corn works well if fresh is out of season.
