Ingredients
1 medium Russet potato or 2 white potatoes, peeled and diced
1 pound ground chuck
1 teaspoon salt (more to taste)
1 teaspoon garlic powder
1 teaspoon cumin
1/2 teaspoon pepper
1 clove garlic, minced
1 small white onion, diced
2 large Roma tomatoes, roughly chopped
1 to 2 serrano chiles, roughly chopped
1/4 cup water
Pinch of salt
Pinch of Mexican oregano
1/8 to 1/4 cup olive oil
Instructions
- Heat olive oil in a nonstick skillet over medium heat.
- Add diced potatoes and cook until browned and crispy, covering the pan to steam. Drain on paper towels and set aside.
- In the same skillet, add ground beef and cook over medium-high heat, seasoning with salt, garlic powder, cumin, and pepper. Cook until browned, about 8-10 minutes.
- Add minced garlic and diced onion to the skillet, cooking for 2-3 minutes until fragrant.
- Blend tomatoes, serrano chiles, water, salt, and Mexican oregano until smooth. Pour the sauce into the skillet and bring to a boil.
- Stir in the cooked potatoes, reduce heat, and simmer for 7-10 minutes until the sauce thickens.
- Serve warm with tortillas or rice, as desired.
Notes
For less spice, use only one serrano chile or substitute with a milder pepper like jalapeño.
Make ahead by preparing the beef and sauce in advance; store separately from potatoes to keep them crisp.
Customize toppings with sour cream, cilantro, avocado, or cheese for added flavor.
