Ingredients
1 1/2 cups rolled oats
1/2 cup almond flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup almond butter (or peanut butter)
1/4 cup honey or maple syrup
1 large egg
1 teaspoon vanilla extract
1/3 cup dark chocolate chips or raisins (optional)
1/4 cup chopped nuts (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine oats, almond flour, baking soda, cinnamon, and salt.
- In a separate bowl, mix almond butter, honey (or maple syrup), egg, and vanilla extract until smooth.
- Add wet ingredients to the dry mixture, stirring to combine. Fold in chocolate chips or raisins and nuts if desired.
- Drop tablespoon-sized portions of dough onto the baking sheet, spacing them 2 inches apart. Flatten each cookie slightly.
- Bake for 8-10 minutes, until edges are lightly golden. Cool on the baking sheet for a few minutes, then transfer to a wire rack.
Notes
For a vegan option, substitute the egg with a flax egg (1 tablespoon ground flaxseed + 3 tablespoons water).
Store cookies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Cookies can also be frozen for up to 3 months.
