2 cups crushed graham crackers
1/2 cup unsalted butter, melted
2 lbs cream cheese, room temperature
1 1/2 cups granulated sugar
4 large eggs
1 cup sour cream
1 tablespoon vanilla extract
1/2 cup marshmallow fluff
Zest of 1 lemon
Instructions
- Preheat oven to 325°F (163°C). Mix graham crackers and butter; press into a springform pan.
 - Beat cream cheese and sugar until smooth. Add eggs, one at a time. Mix in sour cream, vanilla, and lemon zest.
 - Gently fold in marshmallow fluff. Pour over crust.
 - Bake for 55 minutes. Turn off oven, leave cheesecake inside for 1 hour.
 - Chill for 4 hours before serving.
