Ingredients

2 tablespoons butter

1 large onion, chopped

1 pound cremini or button mushrooms, sliced

2 teaspoons Hungarian paprika

1 teaspoon dried dill

1 tablespoon soy sauce

2 cups vegetable or chicken broth

1 cup whole milk or half-and-half

2 tablespoons all-purpose flour

½ cup sour cream

2 tablespoons lemon juice

Salt and pepper to taste

2 tablespoons fresh parsley, chopped


Instructions

  1. In a large pot, melt butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the sliced mushrooms and cook for 8-10 minutes, or until the mushrooms release their juices.
  3. Stir in the paprika, dried dill, and soy sauce, and cook for another minute.
  4. Pour in the broth, and bring the mixture to a simmer. Cover and cook for 10 minutes.
  5. In a small bowl, whisk flour into the milk until smooth, then gradually stir it into the soup. Simmer for another 5 minutes, stirring occasionally, until the soup slightly thickens.
  6. Reduce the heat to low and stir in the sour cream and lemon juice. Season with salt and pepper to taste.
