Iowa Party Bites are bite-sized appetizers featuring Midwest-inspired flavors like sweet corn, cheddar cheese, and smoky paprika. Perfect for parties, game days, and holiday gatherings!
Ingredients
1 cup sweet corn kernels (fresh, frozen, or canned)
1 cup shredded cheddar cheese
1/2 cup diced red bell pepper
1/4 cup finely chopped green onions
1/2 cup cooked and crumbled bacon (optional)
1/4 cup sour cream
1/4 cup mayonnaise
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt and pepper to taste
24 mini phyllo shells or small cracker bases
Fresh parsley, for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a medium bowl, combine sweet corn, cheddar cheese, red bell pepper, green onions, and bacon (if using).
- Stir in sour cream, mayonnaise, smoked paprika, garlic powder, salt, and pepper until well mixed.
- Fill mini phyllo shells or cracker bases with the mixture evenly.
- Place filled shells on a baking sheet and bake for 12-15 minutes, or until the cheese is melted and shells are golden.
- Remove from the oven, cool slightly, and garnish with fresh parsley. Serve warm.
Notes
To make vegetarian, omit the bacon.
For a spicy kick, add diced jalapeños or cayenne pepper.
To ensure crispiness, reheat in the oven instead of microwaving.
Use gluten-free cracker bases if needed.
