Description

Iowa Party Bites are bite-sized appetizers featuring Midwest-inspired flavors like sweet corn, cheddar cheese, and smoky paprika. Perfect for parties, game days, and holiday gatherings!


Ingredients

1 cup sweet corn kernels (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1/2 cup diced red bell pepper

1/4 cup finely chopped green onions

1/2 cup cooked and crumbled bacon (optional)

1/4 cup sour cream

1/4 cup mayonnaise

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

24 mini phyllo shells or small cracker bases

Fresh parsley, for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a medium bowl, combine sweet corn, cheddar cheese, red bell pepper, green onions, and bacon (if using).
  3. Stir in sour cream, mayonnaise, smoked paprika, garlic powder, salt, and pepper until well mixed.
  4. Fill mini phyllo shells or cracker bases with the mixture evenly.
  5. Place filled shells on a baking sheet and bake for 12-15 minutes, or until the cheese is melted and shells are golden.
  6. Remove from the oven, cool slightly, and garnish with fresh parsley. Serve warm.

Notes

To make vegetarian, omit the bacon.

For a spicy kick, add diced jalapeños or cayenne pepper.

To ensure crispiness, reheat in the oven instead of microwaving.

Use gluten-free cracker bases if needed.
