Ingredients

2 1/2 cups almond flour

3/4 cup granulated sugar or coconut sugar

3 large eggs, separated

1/4 cup olive oil or melted butter

Zest of 2 oranges

1/4 cup fresh orange juice

1 teaspoon vanilla extract

1 teaspoon baking powder

Pinch of salt

Powdered sugar for dusting (optional)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. In a large bowl, mix almond flour, sugar, baking powder, orange zest, and salt.
  3. In another bowl, whisk egg yolks, olive oil, orange juice, and vanilla extract until smooth. Combine with the dry ingredients.
  4. Beat egg whites with an electric mixer until stiff peaks form.
  5. Gently fold egg whites into the batter in three additions, maintaining its airiness.
  6. Pour batter into the prepared pan, smooth the top, and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool completely in the pan before transferring to a plate. Dust with powdered sugar if desired.

Notes

For a dairy-free version, use olive oil instead of butter.

Swap orange zest and juice with lemon for a tangy variation.
