Ingredients

3 fresh jalapeño peppers, sliced into rings

½ cup all-purpose flour

½ tsp garlic powder

½ tsp paprika

Salt and pepper to taste

2 large eggs

4 oz light beer (or fizzy seltzer/clear soda)

23 cups peanut or vegetable oil (enough to cover battered jalapeños)


Instructions

  1. Heat oil in a large pan over medium heat.
  2. In a mixing bowl, combine flour, garlic powder, paprika, salt, and pepper. Mix well.
  3. Add eggs to the flour mixture and beat to create a batter.
  4. Stir in beer (or soda) until smooth.
  5. Dip jalapeño slices in the batter in batches, coating each slice evenly.
  6. Fry battered jalapeño slices in hot oil for 5-6 minutes, turning as needed until golden and crispy.
  7. Drain on paper towels, lightly salt, and serve hot. Enjoy!

Notes

For extra crunch, you can double dip the jalapeños in the batter.

If you want to adjust the heat level, remove the seeds from the jalapeños before slicing.
