Description

These King Crab Quesadillas offer a unique twist on the classic favorite, combining sweet crab meat, zesty lime, spicy jalapeños, and gooey Monterey Jack cheese. Perfect for a light meal or appetizer, this seafood quesadilla recipe is quick to prepare and packed with flavor, making it an impressive dish for any occasion.


Ingredients

1/4 pound crab meat (thawed)

Juice and zest of 1 lime

1 jalapeño, chopped

1 green onion, chopped

1 handful of cilantro, chopped

1 teaspoon cumin, toasted and ground

Salt and pepper to taste

2 flour tortillas

A touch of butter or oil

1/2 cup Monterey Jack cheese, grated


Instructions

  1. Boil the crab meat in a pot of water for about 3 minutes. Rinse the crab in cold water to stop the cooking process.
  2. Remove the shell and cut the crab into bite-sized pieces.
  3. In a bowl, combine lime juice, lime zest, chopped jalapeño, green onion, cilantro, cumin, salt, and pepper. Add the crab meat and marinate for 10-30 minutes.
  4. Heat a small amount of butter or oil in a skillet over medium heat. Place one tortilla in the skillet and cook until air pockets form, flipping as needed. Repeat with the second tortilla.
  5. Drain any excess liquid from the crab mixture, then spread the crab mixture evenly over one tortilla in the pan. Sprinkle grated cheese over the crab and place the second tortilla on top.
  6. Cook until golden brown on both sides and the cheese has melted. Flip carefully and cook the other side.
  7. Serve immediately and enjoy!

Notes

If you prefer a spicier quesadilla, increase the amount of jalapeño or add a pinch of cayenne pepper.

For an added flavor boost, serve with a side of sour cream, guacamole, or a tangy salsa.

Feel free to substitute the crab with other seafood like shrimp or lobster for a different taste.
