Ingredients
2 cups all-purpose flour
2 sticks (1 cup) unsalted butter, softened
2 (3 oz) packages cream cheese, softened
Pastry filling of choice (apricot, raspberry, poppy seed, etc.)
Powdered sugar, for dusting
Instructions
- Prepare the Dough: Allow the butter and cream cheese to come to room temperature. Blend them together in a large bowl until smooth. Gradually add the flour, mixing with your hands until the dough is fully combined. Cover and refrigerate for at least 1 hour.
- Roll and Cut the Dough: Preheat your oven to 350°F (175°C). Roll the chilled dough on a floured surface to about 1/8-inch thickness. Cut into 2-inch squares.
- Assemble the Kolacky: Place a small amount of filling in the center of each square. Fold two opposite corners over the filling and pinch to seal.
- Bake: Arrange on a parchment-lined baking sheet and bake for 18-20 minutes, or until the bottoms are golden brown.
- Cool and Dust: Cool completely on a wire rack. Sprinkle with powdered sugar before serving.
Notes
Ensure butter and cream cheese are fully softened for a smooth dough.
Experiment with different fillings to suit your taste.
If freezing unbaked cookies, assemble and freeze on a baking sheet, then transfer to a freezer bag. Bake from frozen, adding a few extra minutes to the cooking time.
