Description

Laura Bush’s Cowboy Cookies are a classic Texan treat that combines semisweet chocolate chips, old-fashioned oats, sweetened coconut, and crunchy pecans into a deliciously chewy and hearty cookie. Ingredients

3 cups all-purpose flour

1 tablespoon baking powder

1 tablespoon baking soda

1 tablespoon ground cinnamon

1 teaspoon salt

1 1/2 cups (3 sticks) butter, room temperature

1 1/2 cups granulated sugar

1 1/2 cups light-brown sugar, packed

3 eggs

1 tablespoon vanilla extract

3 cups semisweet chocolate chips

3 cups old-fashioned rolled oats

2 cups sweetened flake coconut

2 cups chopped pecans


Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or leave them ungreased.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  3. In a very large bowl, beat the softened butter with an electric mixer until creamy. Gradually add the granulated sugar and light-brown sugar, and mix until well combined.
  4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  5. Gradually add the flour mixture to the wet ingredients, beating on low speed until just combined.
  6. Stir in the semisweet chocolate chips, rolled oats, sweetened flake coconut, and chopped pecans until evenly distributed.
  7. Drop dough in 1/4 cup portions onto the prepared baking sheets, spacing them about 3 inches apart. Bake for 15-17 minutes, rotating the baking sheets halfway through. The edges should be lightly browned.
  8. Remove from the oven and let the cookies cool on a wire rack.

Notes

For softer cookies, remove them from the oven when the centers are still slightly underbaked.

The dough can be frozen for later use. Scoop onto a baking sheet, freeze until solid, then transfer to a freezer-safe bag or container.
