Description

Discover the ultimate summer dessert with our Lemon Butter Pie recipe. This creamy, rich pie features a delectable lemon butter filling paired with a buttery graham cracker crust. Perfectly chilled or served frozen, it’s an ideal treat for any occasion. Refreshing, easy to make, and irresistibly delicious, this pie will be a hit at your next gathering.

Ingredients

1 ½ cups graham cracker crumbs

4 tbsp butter, melted

½ cup fresh lemon juice

3 large eggs

1 egg yolk

¾ cup sugar

1 cup unsalted butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs with melted butter. Press this mixture into the bottom of a pie dish and bake for 8 minutes. Set aside to cool.
  3. In a saucepan, heat lemon juice over medium heat. Add eggs, egg yolk, and sugar, stirring constantly until the mixture thickens (about 5 minutes). Remove from heat.
  4. Allow the lemon mixture to cool slightly, then stir in the unsalted butter until smooth and fully combined.
  5. Pour the lemon butter filling into the cooled graham cracker crust. Refrigerate for at least 4 hours, or until the pie is set. For a firmer texture, freeze for a few hours before serving.

Notes

For a smoother texture, ensure the filling is well-cooled before adding the butter.

Garnish with lemon zest or whipped cream for an extra touch of elegance.

If freezing, add any garnishes just before serving to maintain their texture.
