Ingredients

For the Crust and Crumb Topping:

1 cup unsalted butter, melted

2 cups all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

For the Lemon Filling:

2 large eggs

1 cup granulated sugar

2 tablespoons all-purpose flour

1/4 cup freshly squeezed lemon juice (about 2 lemons)

Zest of 1 lemon


Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
  2. In a medium bowl, combine the melted butter, flour, sugar, baking powder, and salt. Mix until crumbly. Press half of the mixture into the prepared baking dish.
  3. In another bowl, whisk together the eggs, sugar, flour, lemon juice, and lemon zest until smooth. Pour the lemon filling over the crust, spreading it evenly.
  4. Sprinkle the reserved crumb mixture over the lemon filling.
  5. Bake for 25-30 minutes, or until the top is lightly golden and the filling is set.
  6. Allow the bars to cool completely before cutting into squares and serving.

Notes

For a more pronounced lemon flavor, add an extra tablespoon of lemon zest.

Make sure the bars are completely cooled before slicing to ensure clean cuts.
