Ingredients
For the Crust and Crumb Topping:
1 cup unsalted butter, melted
2 cups all-purpose flour
1/2 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
For the Lemon Filling:
2 large eggs
1 cup granulated sugar
2 tablespoons all-purpose flour
1/4 cup freshly squeezed lemon juice (about 2 lemons)
Zest of 1 lemon
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
- In a medium bowl, combine the melted butter, flour, sugar, baking powder, and salt. Mix until crumbly. Press half of the mixture into the prepared baking dish.
- In another bowl, whisk together the eggs, sugar, flour, lemon juice, and lemon zest until smooth. Pour the lemon filling over the crust, spreading it evenly.
- Sprinkle the reserved crumb mixture over the lemon filling.
- Bake for 25-30 minutes, or until the top is lightly golden and the filling is set.
- Allow the bars to cool completely before cutting into squares and serving.
Notes
For a more pronounced lemon flavor, add an extra tablespoon of lemon zest.
Make sure the bars are completely cooled before slicing to ensure clean cuts.
