Ingredients

1/2 tsp baking powder
2/3 cup fresh lemon juice (about 3–4 lemons)

- Prepare the Crust:
- Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add flour and salt, mixing until a crumbly dough forms.
- Press the dough evenly into the pan. Bake for 18-20 minutes until edges are lightly golden.
- Make the Lemon Filling:
- In a medium bowl, whisk eggs and sugar until smooth.
- Add flour, baking powder, lemon juice, and zest. Whisk until fully combined.
- Assemble and Bake:
- Pour the lemon filling over the warm crust.
- Bake for 22-25 minutes, or until the filling is set and edges are slightly golden.
- Cool and Finish:
- Allow the bars to cool completely in the pan.
- Dust generously with powdered sugar, slice into squares, and serve.
