Ingredients

2 ¼ teaspoons active dry yeast

1 teaspoon vanilla extract

1 teaspoon lemon extract (optional)

2 large eggs

3 ½ cups all-purpose flour

½ teaspoon salt

¾ cup powdered sugar (for icing)

2 tablespoons fresh lemon juice (for icing)

1 tablespoon lemon zest (for icing)


Instructions

  1. In a small bowl, combine warm milk, yeast, and sugar. Stir and let sit for 5-10 minutes until frothy.

  2. In a large bowl, mix melted butter, lemon zest, vanilla extract, lemon extract (if using), and eggs. Add the yeast mixture and combine.

  3. Gradually add flour and salt, mixing until a dough forms. Knead for 6-8 minutes until smooth and elastic.

  4. Place the dough in a greased bowl, cover, and let rise for 1-1.5 hours until doubled in size.

  5. Preheat the oven to 350°F (175°C). Punch the dough down and roll it out into a 12×18-inch rectangle.

  6. Spread softened butter on the dough and sprinkle with sugar and lemon zest.

  7. Roll the dough tightly and slice it into 12 even rolls. Place the rolls in a greased 9×13-inch baking dish, cover, and let rise for 30 minutes.

  8. Bake for 20-25 minutes, until golden brown and cooked through.

  9. While baking, mix powdered sugar, lemon juice, and lemon zest to make the glaze.

  10. Once rolls are baked, drizzle with the glaze and serve.
