Ingredients

1 cup Greek yogurt

1/2 cup almond flour

1/4 cup oat flour

1/4 cup honey or maple syrup

2 tbsp lemon juice

1 tbsp lemon zest

1/4 cup poppy seeds

1 tsp vanilla extract

1/4 tsp baking soda

1/4 tsp salt


Instructions

  1. Preheat & Prepare – Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Mix Wet Ingredients – In a bowl, whisk together Greek yogurt, honey (or maple syrup), lemon juice, lemon zest, and vanilla extract until smooth.
  3. Combine Dry Ingredients – In a separate bowl, whisk together almond flour, oat flour, baking soda, and salt.
  4. Mix Together – Gradually stir the dry ingredients into the wet ingredients until well combined. Fold in poppy seeds.
  5. Bake – Pour batter into the prepared pan, spreading it evenly. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool & Serve – Let the bars cool completely before cutting into squares.

Dairy-Free Option: Use plant-based yogurt instead of Greek yogurt.
