1 cup granulated sugar
1 cup whole milk
1 teaspoon vanilla extract
Zest of 1 lemon

- Preheat the Oven: Preheat your oven to 350°F (175°C). Pour the melted butter into a 9×9-inch baking dish.
- Prepare the Batter: In a medium bowl, whisk together the flour, baking powder, salt, and sugar. Stir in the milk, vanilla extract, and lemon zest until a smooth batter forms.
- Assemble the Cobbler: Pour the batter evenly over the melted butter in the baking dish. Spoon the lemon pie filling or lemon curd over the batter. Carefully pour the hot water over the top of the mixture. Do not stir.
- Bake: Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the cobbler is set.
- Serve: Allow the cobbler to cool slightly before serving. Enjoy warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
For a richer lemon flavor, use lemon curd instead of lemon pie filling.
