Ingredients
1 cup granulated sugar
1/4 cup water
2 large egg whites
1/4 teaspoon cream of tartar
1 teaspoon vanilla extract
1/2 cup marshmallow fluff
Instructions
- In a small saucepan, combine the sugar and water. Bring to a boil over medium heat, stirring until the sugar dissolves completely. Continue boiling without stirring until the mixture reaches 240°F (115°C) on a candy thermometer.
- While the syrup is heating, beat the egg whites and cream of tartar in a clean bowl using an electric mixer on medium speed until soft peaks form.
- Once the sugar syrup reaches temperature, slowly pour it into the egg whites while beating continuously at medium speed. Be careful not to pour directly onto the beaters to avoid splattering.
- Increase the mixer speed to high and continue beating until stiff peaks form and the mixture is glossy, about 5 minutes.
- Add the vanilla extract and marshmallow fluff, and beat just until combined and the icing is light and fluffy.
- Use immediately to frost your favorite cake or cupcakes.
Notes
