Description

These Mediterranean Chicken Patties are a delicious, healthy, and quick meal option, packed with fresh herbs, spices, and ground chicken. Ingredients

1 lb ground chicken

1/4 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup red onion, finely chopped

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)

1 tablespoon lemon juice

1 teaspoon ground cumin

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil (for cooking)


Instructions

  1. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, red onion, garlic, parsley, oregano, lemon juice, cumin, paprika, salt, and pepper. Mix everything together until well combined.
  2. Form the mixture into small patties, about 1 to 1 1/2 inches in diameter.
  3. Heat olive oil in a large skillet over medium heat. Once hot, add the patties and cook in batches, if needed. Cook for 4-5 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
  4. Remove the patties from the skillet and allow them to rest for a couple of minutes before serving.

Notes

For extra Mediterranean flair, serve with tzatziki sauce.

You can swap ground chicken for turkey, lamb, or beef.

To make a vegetarian version, use mashed chickpeas or lentils in place of the chicken.

Add cayenne pepper or red chili flakes for a spicy kick.

These patties can be made ahead of time and stored in the fridge or frozen for later use.
