Ingredients
1 lb ground chicken
1/4 cup breadcrumbs (preferably whole wheat)
1/4 cup grated Parmesan cheese
1/4 cup red onion, finely chopped
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)
1 tablespoon lemon juice
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil (for cooking)
Instructions
- In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, red onion, garlic, parsley, oregano, lemon juice, cumin, paprika, salt, and pepper. Mix everything together until well combined.
- Form the mixture into small patties, about 1 to 1 1/2 inches in diameter.
- Heat olive oil in a large skillet over medium heat. Once hot, add the patties and cook in batches, if needed. Cook for 4-5 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
- Remove the patties from the skillet and allow them to rest for a couple of minutes before serving.
Notes
For extra Mediterranean flair, serve with tzatziki sauce.
You can swap ground chicken for turkey, lamb, or beef.
To make a vegetarian version, use mashed chickpeas or lentils in place of the chicken.
Add cayenne pepper or red chili flakes for a spicy kick.
These patties can be made ahead of time and stored in the fridge or frozen for later use.
