Ingredients

2 cups corn kernels (fresh, frozen, or canned, drained)

1/2 cup all-purpose flour

1/4 cup cornmeal

1 teaspoon baking powder

1/2 teaspoon chili powder

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 cup grated Cotija cheese

1/4 cup fresh cilantro, chopped

1 large egg

1/4 cup milk

Vegetable oil, for frying

Lime wedges, for serving

Additional Cotija cheese, for garnish


Instructions

  1. In a large bowl, mix corn kernels, flour, cornmeal, baking powder, chili powder, garlic powder, smoked paprika, salt, and pepper.
  2. Add grated Cotija cheese, cilantro, egg, and milk to the bowl, stirring until a thick batter forms.
  3. Heat 1 inch of vegetable oil in a skillet over medium heat until it reaches 350°F (175°C).
  4. Drop spoonfuls of batter into the hot oil, flattening slightly with the back of a spoon.
  5. Fry for 2-3 minutes per side, or until golden brown. Remove and drain on paper towels.
  6. Serve warm with lime wedges and a sprinkle of Cotija cheese.

Notes

Add jalapeño or cayenne for extra spice.

Substitute Cotija with feta or Parmesan if unavailable.

Bake at 400°F (200°C) for a healthier option.

Store leftovers in the fridge for up to 3 days or freeze for up to 3 months. Reheat in the oven to retain crispiness.
