Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
6 oz milk chocolate, chopped (or milk chocolate chips)
Orange food coloring
Black decorating gel or melted dark chocolate (for the jack-o’-lantern faces)
Instructions
- Preheat the Oven:
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper. - Make the Cookie Dough:
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract. In another bowl, whisk together the flour, baking powder, and salt. Gradually mix the dry ingredients into the butter mixture until a soft dough forms. Add orange food coloring to achieve a vibrant pumpkin color. - Shape and Cut the Cookies:
Roll out the dough on a floured surface to about ¼-inch thickness. Use a pumpkin-shaped cookie cutter to cut out cookies. On half of the cookies, cut out jack-o’-lantern faces using a sharp knife. - Add the Chocolate Filling:
Place the non-cutout cookies on the prepared baking sheets. Put a small amount of chopped milk chocolate (or chocolate chips) in the center of each cookie. Top with the jack-o’-lantern face cookies, pressing the edges to seal. - Bake the Cookies:
Bake for 10-12 minutes, or until the edges are lightly golden. Cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely. - Decorate the Faces (Optional):
Use black decorating gel or melted dark chocolate to outline or enhance the jack-o’-lantern faces if desired.
Notes
For an extra festive touch, decorate the jack-o’-lantern faces with additional details using black gel or dark chocolate.
If the dough is too sticky, chill it in the refrigerator for 15-20 minutes before rolling out.
