Made with simple ingredients like cake flour, egg whites, and buttermilk, it’s easy to bake and decorate. Whether you’re a beginner or seasoned baker, this recipe ensures delicious results every time!

Ingredients

For the Cake:

2 ½ cups cake flour

2 ½ tsp baking powder

½ tsp baking soda

½ tsp salt

1 ½ cups granulated sugar

1 cup buttermilk (room temperature)

½ cup unsalted butter (softened)

½ cup vegetable oil

5 large egg whites (room temperature)

2 tsp vanilla extract

½ tsp almond extract (optional, for a subtle almond flavor)

For the Frosting:

1 cup unsalted butter (softened)

4 cups powdered sugar (sifted)

¼ cup heavy cream

1 tsp vanilla extract

Pinch of salt

Instructions

  1. Prepare the Cake Batter: Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a bowl, sift the cake flour, baking powder, baking soda, and salt. In a separate bowl, cream together softened butter and sugar until fluffy. Add the oil, egg whites, vanilla, and almond extract, mixing well. Gradually add the dry ingredients alternating with buttermilk, mixing until just combined.
  2. Bake the Cake: Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let the cakes cool for 10 minutes before transferring to a wire rack.
  3. Make the Frosting: Beat the softened butter until smooth. Gradually add sifted powdered sugar, then add the heavy cream, vanilla, and a pinch of salt, continuing to beat until light and fluffy.
  4. Assemble the Cake: Place one layer on a serving plate and spread frosting on top. Place the second layer on top and frost the top and sides of the cake. Decorate as desired.

Notes

Room Temperature Ingredients: For the best texture, ensure that your butter, egg whites, and buttermilk are at room temperature before mixing.

Frosting Consistency: If the frosting is too thick, add more cream; if too thin, add more powdered sugar.

Customization: Add fresh berries, sprinkles, or edible flowers for decoration.
