Ingredients
8 slices of sourdough bread
1 lb mushrooms, sliced
2 large onions, thinly sliced
8 slices Gouda cheese
4 tablespoons butter
2 tablespoons olive oil
Salt and pepper to taste
Instructions
- In a skillet, heat olive oil over medium heat. Add sliced onions and a pinch of salt. Cook until caramelized, about 15-20 minutes, stirring occasionally.
- Add sliced mushrooms to the skillet, season with salt and pepper, and cook until mushrooms are golden and all liquid has evaporated, about 10 minutes.
- Butter one side of each slice of bread. Place a slice of bread, butter-side down, on a clean skillet over medium heat.
- Layer a slice of Gouda cheese, some mushroom and onion mixture, and another slice of Gouda cheese on the bread. Top with another slice of bread, butter-side up.
- Cook until the bread is golden brown and the cheese begins to melt, then flip and cook the other side until browned and the cheese is fully melted.
- Repeat with the remaining sandwiches.
Notes
For a crispier crust, use a cast-iron skillet or a griddle.
