Ingredients

8 slices of sourdough bread

1 lb mushrooms, sliced

2 large onions, thinly sliced

8 slices Gouda cheese

4 tablespoons butter

2 tablespoons olive oil

Salt and pepper to taste


Instructions

  1. In a skillet, heat olive oil over medium heat. Add sliced onions and a pinch of salt. Cook until caramelized, about 15-20 minutes, stirring occasionally.
  2. Add sliced mushrooms to the skillet, season with salt and pepper, and cook until mushrooms are golden and all liquid has evaporated, about 10 minutes.
  3. Butter one side of each slice of bread. Place a slice of bread, butter-side down, on a clean skillet over medium heat.
  4. Layer a slice of Gouda cheese, some mushroom and onion mixture, and another slice of Gouda cheese on the bread. Top with another slice of bread, butter-side up.
  5. Cook until the bread is golden brown and the cheese begins to melt, then flip and cook the other side until browned and the cheese is fully melted.
  6. Repeat with the remaining sandwiches.

Notes

For a crispier crust, use a cast-iron skillet or a griddle.
