Description

These easy No-Bake Biscoff Cookie Truffles combine the rich flavor of buttery Biscoff cookies, creamy peanut butter, and a smooth white chocolate coating for a decadent, melt-in-your-mouth treat. Perfect for last-minute desserts or homemade gifts, these truffles are simple to make and absolutely irresistible.

Ingredients

1 package (8.8 oz) Biscoff cookies, crushed

1/2 cup powdered sugar

1/2 cup creamy peanut butter or almond butter

1/4 cup unsalted butter, melted

8 oz white chocolate chips, melted

1 teaspoon vanilla extract

Pinch of salt

Instructions

  1. Crush the Biscoff cookies into fine crumbs using a food processor.
  2. In a large bowl, combine crushed cookies, powdered sugar, peanut butter, melted butter, vanilla extract, and a pinch of salt. Stir until the mixture is smooth and thick.
  3. Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet.
  4. Dip each ball into the melted white chocolate, using a fork to coat evenly. Return the dipped truffles to the parchment paper.
  5. Optionally, sprinkle extra crushed Biscoff crumbs on top for added texture.
  6. Refrigerate the truffles for at least 30 minutes until firm.
  7. Once chilled, the truffles are ready to serve.

Notes

You can swap white chocolate with dark or milk chocolate for a different flavor.

Nut butter options: Peanut butter, almond butter, or cashew butter all work well.

For extra crunch, consider adding chopped nuts like pecans or walnuts into the truffle mixture.
