8 oz white chocolate chips, melted
1 teaspoon vanilla extract

Instructions
- Crush the Biscoff cookies into fine crumbs using a food processor.
- In a large bowl, combine crushed cookies, powdered sugar, peanut butter, melted butter, vanilla extract, and a pinch of salt. Stir until the mixture is smooth and thick.
- Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet.
- Dip each ball into the melted white chocolate, using a fork to coat evenly. Return the dipped truffles to the parchment paper.
