Ingredients
1/2 cup unsalted butter
1/2 cup light brown sugar, packed
1/2 cup granulated sugar
1/4 cup heavy cream
1/4 tsp salt
1 tsp vanilla extract
2 cups sweetened shredded coconut
1 cup quick oats
Instructions
- In a medium saucepan, melt the butter over medium heat.
- Stir in the brown sugar, granulated sugar, heavy cream, and salt. Bring to a gentle boil, stirring frequently, and let it boil for 1 minute.
- Remove the saucepan from heat and stir in the vanilla extract.
- Add shredded coconut and quick oats, mixing until fully combined.
- Using a spoon or cookie scoop, drop the mixture onto a parchment-lined baking sheet, shaping cookies.
- Cool at room temperature for 20-30 minutes until set. Alternatively, refrigerate for 15 minutes to speed up the process.
- Once firm, enjoy immediately or store for later.
Notes
For firmer cookies, add an extra 1/4 cup of quick oats or boil the mixture an additional 30 seconds.
For less sweetness, use unsweetened coconut and adjust sugar to taste.
