Description

Make these easy and healthy No-Bake Pumpkin Pie Energy Balls! Packed with oats, almond butter, pumpkin puree, and fall-inspired spices, they’re perfect for quick snacks, post-workout fuel, or a nutritious treat. Ready in minutes with no baking required!

Ingredients

1 cup old-fashioned oats

1/2 cup almond butter (or peanut butter)

1/2 cup canned pumpkin puree

1/4 cup honey or maple syrup

1/4 cup ground flaxseed

1/4 cup mini chocolate chips (optional)

1 teaspoon pumpkin pie spice

1/2 teaspoon cinnamon

1/4 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, combine oats, ground flaxseed, pumpkin pie spice, and cinnamon.
  2. Add almond butter, pumpkin puree, honey (or maple syrup), and vanilla extract. Stir until well combined.
  3. Fold in mini chocolate chips, if using.
  4. Using your hands or a small scoop, form the mixture into bite-sized balls.
  5. Place the energy balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the fridge for up to one week or freeze for longer storage.

Notes

For a nut-free version, use sunflower seed butter.

Adjust sweetness by adding more or less honey/maple syrup to taste.

Freeze extra energy balls to enjoy later—just thaw before eating.

Swap mini chocolate chips for raisins, cranberries, or chopped nuts for variation.
