2 teaspoons coconut oil or shortening (optional, for smoother melting)


Instructions

  1. In a large mixing bowl, beat together the peanut butter, softened butter, and vanilla extract until smooth.
  2. Gradually mix in the powdered sugar until a thick, dough-like consistency forms.
  3. Roll tablespoon-sized portions of the mixture into balls and place them on a parchment-lined baking sheet.
  4. Refrigerate the balls for 30 minutes, or until firm.
  5. Melt the chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals, stirring after each, until smooth.
  6. Dip each peanut butter ball into the melted chocolate, allowing the excess to drip off, and return them to the baking sheet.
  7. Chill the coated balls for 20–30 minutes, or until the chocolate sets completely.
