Instructions
- In a large mixing bowl, beat together the peanut butter, softened butter, and vanilla extract until smooth.
- Gradually mix in the powdered sugar until a thick, dough-like consistency forms.
- Roll tablespoon-sized portions of the mixture into balls and place them on a parchment-lined baking sheet.
- Refrigerate the balls for 30 minutes, or until firm.
- Melt the chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals, stirring after each, until smooth.
- Dip each peanut butter ball into the melted chocolate, allowing the excess to drip off, and return them to the baking sheet.
