Ingredients
8 oz cream cheese, softened
1/2 cup peanut butter
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
1 cup graham cracker crumbs (or crushed digestive biscuits)
1 cup chocolate chips (optional, for coating)
1 teaspoon coconut oil (if melting chocolate)
Instructions
- In a mixing bowl, beat the cream cheese, peanut butter, powdered sugar, and vanilla extract until smooth.
- Stir in the graham cracker crumbs and mix until well combined. The mixture should be thick and easy to roll.
- Using a spoon or small cookie scoop, form into bite-sized balls and place them on a parchment-lined tray.
- Freeze for about 30 minutes until firm.
- If coating with chocolate, melt chocolate chips with coconut oil in the microwave in 30-second intervals, stirring until smooth.
- Dip each cheesecake ball into the melted chocolate, then place back on the parchment-lined tray.
- Refrigerate for at least 15 minutes until the chocolate sets. Serve chilled.
Notes
Nut-Free Option: Use sunflower seed butter or cookie butter instead of peanut butter.
Extra Crunch: Add chopped nuts, crushed pretzels, or mini chocolate chips to the mixture.
White Chocolate Coating: Swap dark/milk chocolate for white chocolate.
Oreo Crumbs: Replace graham cracker crumbs with crushed Oreos for a cookies-and-cream twist.
Drizzled Topping: Instead of a full coating, drizzle melted chocolate on top for a lighter touch.
