Ingredients
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
3 large ripe bananas, mashed
1/2 cup granulated sugar
1/4 cup brown sugar, packed
1/3 cup unsalted butter, melted
1 large egg
1 teaspoon vanilla extract
1/2 cup Nutella (or other chocolate hazelnut spread)
Instructions
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
- In a large bowl, mash the bananas and mix in the granulated sugar, brown sugar, melted butter, egg, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined (do not overmix).
- Fill each muffin cup halfway with the banana batter.
- Warm the Nutella slightly, then add about a teaspoon of Nutella on top of each muffin. Use a toothpick to gently swirl the Nutella into the batter.
- Bake for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
Use very ripe bananas for the best flavor.
You can substitute whole wheat flour for all-purpose flour, but the texture may be denser.
For a nut-free option, use a nut-free chocolate spread.
